This recipe came from my love for coconut and my body’s dislike for dairy; like many little ones that I work with. This is a great alternative to whip cream, it is organic and easy to do. Another bonus, there are so many great health benefits of coconut.

INGREDIENTS

1 can of organic coconut milk

1.5 teaspoons powdered sugar

1/2 teaspoon vanilla extract

INSTRUCTIONS

The night before, place the can of coconut milk in the fridge. 

Day of…

Parent: Open the can of coconut milk. There will be a portion that has hardened, remove that and leave the liquid behind. You can use the liquid for other recipes and save if you would like. Place the hardened portion into a bowl.

Kiddo: Add the sugar and vanilla extract to the coconut milk.

Kiddo: Get a hand held blender and blend the coconut milk, sugar and vanilla extract. Blend it till it gets a little harder and thickens for about 2-3 minutes.

Parent: Cut a strawberry in half and then into 4-5 pieces length wise to make the legs for the silly creature.

Kiddo: Scoop a spoon full of the whip cream onto a plate and arrange two blueberries to be eyes. Then arrange the strawberries to make the legs. Enjoy making your Silly Creature.

LANGUAGE AND SPEECH TIME 

Use this time to be creative. Have him/her create silly names for the various silly creatures he or she plans to make. Ask where this creature lives, what special things it can do, what it enjoys to eat. Have fun being creative!
