Cashew Cream Sauce

This cashew cream sauce is a delicious, healthy and vegan-friendly option that can replace cheese in most dishes. Most cream sauces are not usually a healthy option; typically they contain a lot of heavy cream, unhealthy oils, and cheese.
This cashew cream sauce recipe is a healthier alternative and is packed full of flavor. Cashews are very nutritious, a powerhouse of proteins and contain a lot of healthy fat (mostly monounsaturated fats) and, surprisingly, quite a bit of protein. They are also high in fiber, potassium, magnesium, iron, vitamin B6, and Vitamin E.
RECIPE FOR CASHEW CREAM SAUCE:
INGREDIENTS:
- 2/3 cup raw cashews, soaked for 5 hours and rinsed
- 1 cup of almond milk
- 2 cloves of garlic
- ¼ cup nutritional yeast
- ½ lemon, juiced
- 1 teaspoon salt
- 1 teaspoon All Seasoning
- 1 teaspoon parsley
- 1 teaspoon oregano
- 1 teaspoon dried basil
Optional add Spinach for extra Iron and more vegetables (we added 2 big handfuls of fresh cleaned spinach)

INSTRUCTIONS:
Add all ingredients into your blender, Vitamix, or food processor and blend until thick and creamy.
We used the cashew cream sauce to replace the ricotta cheese in our gluten & dairy free lasagna recipe here. This recipe is easy to make and a great way to involve the kids in cooking a healthy, meatless meal.
